from the land of we don’t celebrate christmas but have our own made up holidays comes au pair day, celebrated on the second sunday of july. the inaugural au pair day was held yesterday to the great joy of all in attendance.

i grow hot peppers and thai basil in my garden soley to enjoy this recipe and this past weekend i was able to harvest my first helping – oh ho ho…

thai basil chicken

ingredients:
2 tbsp oil
1 medium onion
6 cloves garlic
2 medium hot chili peppers
1 lb chicken
1 red pepper
1 yellow pepper
1 cup coarsely chopped fresh thai basil
1 tbsp ground black pepper
2 tbsp fish sauce

preparation:
saute onion and garlic in oil for a few minutes (til tender, not browned)
add chili peppers and cook for one minute
add chicken
after chicken is half way cooked add red and yellow peppers
when chicken is cooked through add basil, black pepper and fish sauce
serve over rice

i saw the new michael moore documentary fahrenheit 9/11 and didn’t think it was that controversial – guess that says something about my politics.
